Turkey Potato Salad

Here's another way to use up left over turkey. This was one of our lunches over the winter holiday. To use up some left over turkey meat from our New Year's dinner, we made this Turkey Potato Salad which is very simple to make and basically is just a potato salad with turkey.

Here is the basic recipe we used:
1 cup chopped cooked turkey meat
3 large potatoes, boiled, peeled and cubed
1 carrot, peeled and grated
2 hard boiled eggs, cubed
2 tablespoons relish
3/4 cup Mayonnaise
Salt & Pepper, to taste

Mix all the ingredients together and serve.

Simple, right? You can serve this as a side, or use it like you would a turkey/chicken salad and make sandwiches. We ate this over toasted rosemary baguettes. Yummy!

snack and soda vending machine downstairs where I go when I need some comfort. I'm almost in need of one now...

Just from my patronage alone, I know whoever owns that vending machine is making some money because there are about a hundred more just like me in this building!

The Vending Machine business can be pretty lucrative, I know. One of my best friends had one and he made pretty good money for minimal effort. He goes around to refill his machines once or twice a week and also collects the money during those times. He made as much money from his vending machines as he did from his regular job where he put in eight hours a day daily.

Lavash or Lavosh or Lahvosh

Lavash
No matter how you say it, it's the same thing. Lavash, lavosh or lahvosh all refer to the Armenian flat bread also known as Armenian cracker bread. This was this month's Daring Baker's challenge so you know I was all over this one. It was a nice change to have something savory. The past few months has been all about rich, buttery and chocolaty cakes. Not that I'm complaining, mind you.

I also like this challenge because it wasn't much of a challenge. LOL! The recipe was short enough to follow without an assistant AND it is a vegan and gluten free recipe so I got to try out something totally alien in our meat eating kitchen. I must say that the girls and even their dad did not miss that the crackers and dip did not have one drip of animal in them. :)

Spinach Quesadillas

Spinach Quesadilla This is one of my daughter's specialty dishes. They can now prepare this dish and change it up to suit their taste, all by themselves.

This is a perfect dish to cook with kids because one, which child doesn't like quesadillas? If they like it, and it's easy enough to make, then they will like making it and eating it even more. I've always said that the kitchen is one of the best classrooms in the home. Teach kids to cook early, supervise them, and they will come away with much more than just a full stomach.

Nachos

This is one of the girls' favorite snack and they have become quite adept at making this snack themselves. We like to make our own tortilla chips by frying up leftover corn tortillas. They taste so much better than the store bought ones, we think.

For best taste, we like to make everything from scratch from the tomato salsa, the guacamole to the melted cheese.

MELTED CHEESE. If you've never melted cheese before, there are more than a couple of ways to do it. I will tell you about the two methods that the girls use. One is to simply melt it in the microwave; but if you're not careful you can end up drying the cheese out instead. To be on the safe side, add a little liquid, like a little salsa if you like it spicy, or a tablespoon of milk, to the cheese you are melting. Microwave on high for a couple of minutes, stop and stir. Keep doing this until the cheese is melted.
Another way is to melt it on top of the stove. Place the cheese and liquid in a small pot or saucepan and melt over low heat, stirring constantly until the cheese is melted.

GUACAMOLE. The taste of fresh avocados is hard to replicate and preserve so try to use fresh when you can. The pre-made and packaged guacamoles just cannot compare to freshly made ones. I have previously posted a recipe here. When the girls are being really lazy, they just mash up avocadoes and season it with salt pepper, and a spritz of lemon. You can adjust the guacamole recipe to suite your taste.

SALSA. All you have to do to make a refreshing salsa is mix together tomatoes, onions and cilantro. You can add hot peppers for spice. For this version of their nachos, the girls put the salsa ingredients through the blender and got a finer salsa. You can leave it chunky, or blend it as the girls did. Either way, it's still delicious.

Mara Pizza

Mara PizzaThis girl loves pizza. Especially the kind of pizza that she makes herself and gets to know really well if you know what I mean. She has gotten so good at this pizza making thing that she can now make her own pizza from start to finish. All I have to do is proof the yeast for her first, and she does the rest.

Hot Spinach and Artichoke Dip

Spinach & Artichoke Dip


Everytime we go out to one of those chain restaurants, my girls always get either the chili con queso dip or this one, both usually served with tortilla chips. I looked at several recipes on the internet and came up with this one which is a combination of two or three recipes found. This time around, we served this with toasted baguettes for our Super Bowl Sunday party which the girls didn't want to label as such since we only watch the commercials and half-time show anyway.

INGREDIENTS:
4 cloves of garlic (pre-baked for 20 mins at 20-30 minutes)
1 package of frozen, chopped spinach, thawed and drained thoroughly
1 package of frozen artichoke hearts, cooked according to package directions, drained and chopped
1 jar of Alfredo sauce (store-bought)
1 cup shredded mozzarella cheese
1/2 cup grated parmesan cheese
1 pk (8 oz) cream cheese, softened
1/4 cup sour cream
1/4 cup mayonnaise
1/2 tsp. red pepper flakes

Combine all the ingredients in an oven safe dish and mix well. Cover and bake in the oven preheated to 350 degrees until it is warm and bubbly (about 40-50 mins). Serve warm, but also still good after it cooled off.

The clone actually had this for lunch today. What I did: spread about 2 tablespoons of the dip on a large flour tortilla, top with lettuce, chopped carrots, and cucumbers. Roll up, and you have one healthy veggie burrito for lunch!
