MERRY CHRISTMAS TO ALL!
One of favorite gifts to give away at Christmas are goodies that we make ourselves. Our friends love them too, especially these awesome sugar cookies. Some of our family and friends have come to expect them now and are disappointed when we don't give them any.
These sugar cookies are really easy to make too and you get tons of it. Check them out:
Spritjes - the very best sugar cookies made with egg yolks
Katte Tongen - a delicate sugar cookie made with egg whites
Very convenient to make these two recipes at once as one uses up only egg yolks and the other only egg whites.

Candy Cane Cookies

Holiday baking is all about getting the family together. These candy cane cookies are perfect when baking with kids. My girls love making cookies that you have to handle, roll out and cut out. They love it even more when they are as colorful as these candy cane cookies are.
These Candy Cane cookies are courtesy of The Neelys, Patrick and Gina, who are just too cute in the kitchen cooking together. You can watch them make these cookies and you'll see what I mean.

Want a no fat cookie? Meringue cookies are made simply from egg whites and sugar. No fat! Not like I'm watching my fat intake or anything. I love fats and that's how I ended up with a bunch of egg whites. I was bakin' up a storm and used up a whole lot of yolks for some reason. I didn't want to simply throw perfectly good egg whites away, so what's a frugal cook to do but make meringue cookies :)
Try them out, they are delicate and sweetly satisfying. They are also very easy to make. You can literally stick them in the oven and go to bed. Click here for the recipe for these meringue cookies.

Japanese Cookies

We just had sushi for dinner. Yumm! It seems we've been consuming a lot of Japanese food products lately. Not too long ago, the girls and I found these Harvest Cookies at the Japanese grocery store in Raleigh. They are very thin wafer like sugar cookies, in vanilla and chocolate flavors. They were thin, light and delicious. Not overly sweet but sweet enough to satisfy a sweet tooth.
One of the things that the girls liked about these is that they are individually wrapped so that every batch you opened is just as fresh and crisp as the first one. They were also very convenient for packing in their lunch bags and sharing with their friends.

Whether it's the holiday season or anytime the rest of the year, these sugar cookies will please any cravings for sweets.
These don't have to be this boring circular shape, these cookies are perfect for piping into decorative shapes especially if you have a cookie press. If you'd rather do cut out, you can do that too, just cool the dough down first to make it easier to handle. It's really buttery so it can get pretty soft if left out too long.

Found Not Lost - about all the things we 'find' worth talking about

I have been hacking and coughing for a week now, and just hadn't had much energy nor inspiration to cook. The only thing that feels good on my throat is something soupy, sour and hot. I think I've posted enough sinigang recipes on this blog for everyone to drown in, but I love soups, so what the hey! Anyway, my girls were looking a bit pitiful without anything homemade for days now, so we decided to make these quick and easy cookies for comfort. And guess what, they have lemons! Just what the doctor ordered for a cold. Well, not really, but they were great anyhow.
INGREDIENTS:
3/4 cup (1 & 1/2 sticks) of butter, softened
1 cup granulated sugar
2 Tbsp. poppyseeds
2 tsp. finely grated lemon zest
1 egg
3 tsp. lemon juice
2 cup flour
Cream the butter and sugar until light and fluffy. Mix in the poppyseeds and lemon zest, then the egg and lemon juice. Mix until well blended. Slowly mix in the flour until the dough holds together. Divide dough in half and roll each half into logs using either wax paper or plastic wrap. Chill in the refrigerator for a couple of hours.
When ready to cook, preheat oven to 350 degrees F. Slice dough rounds into 1/4 inch thick. Dip top surface in sugar and bake for 12 minutes or until edges start to brown.
Great served with hot tea or cold milk.
