Easy Dinners

We had company tonight, but we still had an easy to prepare but substantial dinner in less than an hour. And no, dinner didn't come in a bucket. First of, we decided to try out a pack of beef carnitas from Trader Joes, picked up a rotisserie chicken from Costco, a tray of Caesar's Salad and mixed berry cheescake, and we had the makings of a great dinner. We went home and made fresh tomato salsa, opened a pack of tortillas, and dinner was on the table within minutes!

Oh, I also made a quick and easy Spanish rice simply by heating a couple of tablespoons of olive oil, adding a couple of cups of rice and letting it fry up for a minute or two. Add a teaspoon of salt and two cups of water, cover and let it simmer until all the liquid had evaporated and the rice is cooked.

To serve, chop up the carnitas and chicken and make burritos by layering rice, meat, salsa and chopped onions. Serve with a side of Caesar's salad or if you wish, as my youngest daughter did, include the salad inside the burrito and you've got a one wrap meal!

    Hi!
    You didn't use any kind of tomatoes/tomato sauce for the spanish rice? I've never had it like that.

    Hi cc33, no, this quickie version doesn't really use any tomatoes or sauce. Although sometimes, just for color I'd squirt in some ketchup. It's not authentic Spanish Rice, but it will do in a pinch. BTW, in addition to the salt, you can also add a dash of cumin and garlic powder for added flavor.
