Tilapia Escabeche
Tilapia is one of the more reliable fish we can get in our area so we cook it in our kitchen a lot. We've cooked several recipes using tilapia and we are never disappointed. Some of the dishes we've cooked up are:

Tilapia Escabeche (in photo)
Tilapia in Pesto Sauce
Baked Tilapia with Teriyaki Sauce and Onions
Tilapia in Pastry
Tilapia Parmesan
Beer Battered Tilapia

What can I say, we love tilapia! If you too love tilapia and have a unique recipe to share, there is a Tilapia Recipe Contest with a $5,000 grand prize for the best recipe.

Visit Regal Springs Tilapia for contest rules and details then make sure you have your entry in by August 1st!

Tilapia is one of the nicest fishes you can get but I think the problem is that a lot of people have just had the frozen variety which seems to be cheap and plentiful. I have had it fresh and it really is delicious! It works well with something like a simple salsa as it needs a bit of a kick I find

Tilapia is an all-time favorite of my sons and I. My sons love that tilapia's bones are easy to find and remove, and the flesh is so good!
