Our refrigerator died last weekend which may have been a blessing or a curse, depending on how you look at it. The bad, it sucked that it broke down on the weekend, a long weekend at that, and so we were out of a refrigerator for at least two days. The good thing is, it forced out to clean out the contents. We threw out condiments we didn't even know we had and probably had been in the fridge for lord knows how long. Cleaned out the left overs and found out what was in the back of the freezer, and we came up with this bread pudding recipe.
To use up all the bread, milk and eggs that would have gone bad in a couple of days out of the refrigerator, I decided to make bread pudding. But among the jars of condiments to be tossed, I saw several bottles of sweet nata de coco and kaong that we had lefover from making halo-halo, so I decided to throw those in the mix. The result is this colorful bread pudding.
