My husband used to be not too crazy about curried dishes, but like his aversion to fish, we soon got rid of that. Now he is the one who sometimes asks for curry!
This is another one of our quick weekday recipes that uses up what's in the fridge and what better way to marry all the flavors together than with curry. I used pork loin for this dish which speeded up the cooking time even more as I didn't have to cook the pork as long to tenderize it.
